
A simple bowl of yellow dal becomes something truly special with a hot tadka poured over just before serving. Curry leaves, garlic, mustard seeds, cumin, and whole Kashmiri chilies bloom in hot oil, creating an aromatic finish that adds depth, texture, and warmth to every spoonful.
Simple Yellow Dal with Curry Leaf Tadka

Other necessary spices: Ground turmeric, cumin seeds, black mustard seeds, asafoetida (hing), whole dried Kashmiri chilies.

Method
Combine the dal, water, ginger and turmeric in a saucepan. Bring to a boil, skim off any foam, then reduce the heat and simmer for 20–25 minutes, until the dal is soft and creamy. Stir occasionally and add a little more water if needed. Season with salt.
Lightly mash the cooked dal with the back of a spoon or a whisk until smooth but still slightly textured. Keep warm over low heat.
Add the lemon juice to the dal and taste for salt and tartness.
Heat the oil or ghee in a small tadka pan over medium heat.
Add the mustard seeds and let them pop. Stir in the cumin seeds and cook for about 15 seconds, until fragrant.
Add the whole Kashmiri chilies, curry leaves, hing, and sliced garlic. Fry for 30–60 seconds, stirring constantly, until the garlic is lightly golden and the curry leaves become crisp.
Pour the hot tadka directly over the cooked dal. Listen for the sizzle, then gently stir to combine.
Serve immediately with steamed basmati rice or warm roti.
