April reminds me that we’re always growing (up), dear {{first_name | friend}}.
It always feels like a month of quiet transformation. Trees that looked bare only weeks ago begin to soften with green. The air warms, and the days stretch a little longer. It’s a reminder that growth rarely happens all at once—it unfolds slowly, often long before we notice it.
And that we are always growing—not just with the seasons, but in how we move through our lives and relationships.
This past January marked a moment of growth for me in a very personal way.
For nearly two years, I had been working with Modern Adventure to bring a culinary journey to India to life. When the trip finally happened—traveling through Delhi, Agra, Jaipur, and Udaipur with a group of curious and passionate food lovers—it felt like the culmination of something that had been quietly growing for quite some time.
One of the most powerful moments for me came early in the journey, standing before the Taj Mahal in Agra for the first time in my life.
Growing up in India, I always thought of the Taj as something that was simply there, almost like it lived in my backyard. Later, it became something Floyd and I imagined visiting together on one of our trips back home. But somehow… life moved quickly and that moment never came.
Standing there this January felt almost surreal. It was deeply emotional—a moment that felt like it belonged to both of us. In that quiet space, surrounded by its beauty and history, I felt his presence and the many journeys we had shared through food, travel, and life.
Growth, I’ve come to realize, isn’t only about new experiences or places. It’s also about how we learn to hold the people in our lives: with more understanding, more compassion, and sometimes with clearer boundaries. As we grow, our relationships with family and friends grow with us. And that often means learning when to soften, when to step back, and when to create space so those relationships can remain healthy and meaningful. Learning to see others for who they are, shaped by their own journeys, has allowed me to move through relationships with a little more ease and a little less weight.
As the journey continued, food became our guide through each city.
An early morning walk through a Jaipur market filled with vibrant vegetables and piles of spices, the colors and aromas already alive with the promise of the day’s cooking. A memorable Rajasthani meal overlooking the calm waters of Lake Pichola in Udaipur, where every dish carried the warmth and generosity of the region. And wandering through the old streets of Delhi with the group, sharing hot parathas fresh off the griddle—simple, joyful food that instantly brings people together.
Even after a lifetime of cooking with these flavors, experiences like these remind me how endlessly inspiring Indian food can be. Every region has its own rhythm in the kitchen—a different way of layering spices, balancing flavors, and bringing ingredients to life.
I came home with fresh inspiration, reminded that small regional touches can transform a familiar dish, and with new ideas for how my masalas can be layered and shared.
Those experiences are already shaping how I think about the future of Cardoz Legacy. Our masalas will always be rooted in tradition, but travel reminds me that food is alive—it evolves, gathers stories, and continues to grow.
April feels like the perfect moment to embrace that spirit. A season of new ideas, fresh ingredients, and the quiet excitement of what might come next.
