Nowadays, I crave quick recipes that deliver big on flavor.

Once upon a time, I cooked a lot: I worked as a private chef, created recipes for blogs, contributed to cooking events, assisted chefs and food stylists, and even won an award for my gluten-and-dairy-free holiday in a hand pie.

Maybe I burnt out a bit. But I don’t cook nearly as much today. When I do, I rely on simple techniques and stellar ingredients—I want to spend less time in the kitchen, but still eat deliciously!

The CL Masalas help me do that. Especially when I want an easy roast chicken dish, I’ll whisk together a masalas with maybe one or two other spices for a rub or quick marinade.

This combo is one of my favorites: The Kashmiri Masala lends sweet heat that balances honey and fragrant Garam Masala. I add garlic and onion powder for umami and aroma. And then finish with a little vinegar to add some bite and lift. It brings tons of flavor to fattier cuts of chicken like thighs and drumsticks, without making them so rich. (This also works well on a whole chicken—just double everything if you’ve got a big one!)
